Tagliatelle is a traditional egg pasta shape that, thought to have originated in Emilia-Romagna. Some say it was invented in the 15th century by Maestro Zafirano, a cook from Bentivoglio village. Legend has it that Maestro created a Tagliatelle shape because he was inspired by the long beautiful blonde hair of the bride-to-be of the Duke of Ferrara. However, one thing we know for sure is the measurements of perfect Tagliatelle. According to the Italian Academy of Cuisine, Tagliatelle has to be no more, no less than 7mm!
