Giuseppe Cocco makes this very long, wide, smooth hollow tube, an oversized candela from the La Pasta di una Volta range, in Fara San Martino, Abruzzo. The family has worked there since 1916 with bronze dies and slow low-temperature drying. Rooted in Campanian and Sicilian tradition and broken by hand before cooking, it suits slow-cooked meat ragu, baked dishes, and legume sauces. Made from durum wheat semolina and spring water. Cooks in 8 minutes.
