Balsamic Vinegar of Modena IGP (Protected Geographical Indication) is a famous Italian condiment made from Trebbiano and Lambrusco grape. For producing IGP Balsamic Vinegar of Modena, mother vinegar must be mixed with a maximum of 10% finest quality red wine vinegar. Vinegar must be aged in special wood barrels for a minimum of two years and only then bottled. Black summer truffles have a delicate flavor elevated with undertones of earthy aroma. The flavor depends on the time of the harvest - picked from May to August, aroma deepens when truffles are fully ripe.
