Hand-harvested using wooden tools, in order to preserve its characteristic from Guerande. The grey salt is already versatile and delicious itself and added a white truffles making it extraordinary and excellent in all season cold and warm dishes, such as pasta, risotto, eggs, omelets, meat fillets, barbecue steaks, meat carpaccio, fish tartare, cheese, potatoes, salads, vegetables, sushi and foie gras.
In 2010, the Truffle Perlage has the latest technique, used in the past for space exploration missions, is now applied by their company to the most remarkable raw resources and gourmet products.
Freeze-drying is the last frontier of innovation of Truffle Perlage and opens up the door to a wide range of excellent products and raw goods: Pesto sauce, strawberries, peaches, capers from Sicily, mozzarella, blue cheese, rose petals and figs.
