Description

Morelli Paccheri is a large tube-shaped pasta made from Tuscan durum wheat semolina and enriched with fresh wheat germ. The low-temperature drying and bronze drawing give each piece a firm, porous texture that soaks up sauce inside and out. As it cooks, the pasta releases a distinct wheat aroma and may tint the water a soft green. The wide tubes are sturdy and ideal for baked dishes, chunky tomato sauces, or rich ragùs that settle into the center of each piece. Paccheri is also a nice option for seafood sauces, where pieces of shrimp, calamari, or clams can tuck inside the pasta.
