Verjuice was an essential for cooking in the Middle Ages and had a major part to play in the international reputation of Dijon Mustard. This verjuice is from the Bourdelas grape variety and has a distinguished flavor profile. Less acidic than lemon juice, but not as sour as vinegar, verjuice is a key ingredient for various French chefs. Try using for salads, fish and meat dishes, or to deglaze pans!
