Description

Fontana Dolce delle Feste Panettone is the Milanese Christmas cake made the way it should be, slowly leavened so the crumb comes out tall and soft and full of air rather than dense like a loaf. Raisins and candied orange peel run through it, and the citrus is what stops the sweetness from turning heavy. The bakery works on holiday baking all year round. Pull it apart with your hands rather than cutting neat slices, the way they do in Italy, with coffee in the morning or a small glass of something sweet after dinner.
