The Rollino is one of those snacks that has been part of Italian lunchboxes and afternoon breaks since the 1950s: a thin sheet of soft sponge cake, made with fresh eggs for that signature light, springy texture, rolled around a cream filling and enrobed in chocolate. This pistachio version fills the roll with a pistachio paste cream and swaps the usual chocolate coating for white chocolate, giving it a pale green and ivory look that's as distinctive on the outside as the flavor is on the inside. The pistachio cream is sweet, nutty, and gently flavored — accessible rather than intense, the kind of thing that disappears faster than expected.
