Urbani Truffle Kettle-Cooked Potato Chips, Large come from a long-established Italian truffle house, and they are the real thing rather than a truffle-flavored gimmick. The potatoes are sliced, kettle cooked in sunflower oil and salted, then finished with dehydrated summer truffle, Tuber aestivum, and dried mushroom for depth. The flavor is nutty and mushroomy rather than perfumed and chemical, and the crunch is hard and blistered rather than papery. They are nut free and soy free. Open a bag alongside a glass of sparkling wine and a plate of salumi and you have an aperitivo in about ninety seconds. A serious step up from ordinary flavored chips, and hard to put down.
