Tre Marie Soft Chocolate Cacao Nib Cookies are not the crisp Italian biscuit you may be expecting. They come from Cosio Valtellino in Lombardy, where the cocoa shortcrust is worked with butter and egg yolk so it bakes up cakey and yielding instead of dry and snappy. Morbidi, the word on the pack, simply means soft. Inside are chunks of dark chocolate and crunchy cacao nibs, which add a faintly bitter, roasted edge against the sweetness and keep them from being cloying. They are a grown-up chocolate cookie. Have one with an espresso after dinner, or with a glass of cold milk, and store them sealed so the crumb stays tender.
