Description

Riso Scotti Truffle Carnaroli Risotto comes from the rice country of Lombardy's Pavia plain, and it needs nothing but boiling water and roughly fifteen minutes on the stove. Carnaroli is the thick, starchy grain Italian cooks choose when they want the center of each kernel to stay firm inside a creamy sauce. Aged cheese, onion, champignon mushrooms and black summer truffle give it a woodsy, savory depth that tastes like a restaurant dish rather than something from a pouch. It is gluten free and makes two generous portions. Finish it with a knob of butter off the heat, and if you have truffle oil, a few drops at the very end will lift the whole thing.
