Riso Scotti Porcini Mushroom Carnaroli Risotto brings a Pavia rice mill's flagship grain into a weeknight dinner: Carnaroli, the variety Italian cooks choose because it holds its bite while turning creamy, blended with dried cep mushrooms and a cheese base. Water goes in, dinner is ready in about fifteen minutes, two servings from one pouch. Cepes is simply the French word for porcini, the woodsy mushroom that gives this its savory depth. It is gluten free, and the rice is grown in Italy. Stir in butter off the heat and grate Parmigiano over the top. If you have a few dried porcini in the cupboard, soak some and add them too.
