Riso Scotti Creamy Cheese Carnaroli Risotto starts with 100 percent Italian Carnaroli, the grain Lombardy cooks reserve for risotto because it keeps its bite while giving up its starch slowly. The rice house behind it has been milling in Pavia since 1860. The clever part is that only water goes in the pan: thirteen to fifteen minutes later you have two rich portions carrying mild, milky cheese with a quiet note of onion and garlic, with no stock to make and no standing over the pot stirring. It is gluten free. Stir in a knob of butter and a handful of grated Parmigiano at the end and nobody will guess it came from a pouch.
