San Carlo Taralli with Onion and Olives come from Italy, where these small baked rings have been a southern snacking staple for generations. White wine and olive oil go into the dough before it is shaped and baked dry, so the bite is hard and snappy rather than flaky, with sweet onion and briny black olive running through. Extra virgin olive oil in the mix rounds the flavor out well beyond the plain seed-oil versions, and the recipe is vegetarian. These are the boldest of the taralli, so they hold their own against strong flavors. Put them on the table with cured meats, marinated olives and a cold glass of white or a spritz.
