Description

La Casa Del Grano Rigatini Pasta is rigatoni shrunk down, a short ridged tube wide enough to catch a chunky sauce but small enough to eat with a spoon. That makes it one of the few shapes that is genuinely good in both a soup and a ragu. Made in Cagliari from durum wheat semolina by a firm known for traditional Sardinian shapes since the 1950s. Cook it a minute under, keep a ladle of the cooking water back, and stir that into the sauce at the end to bring the whole thing together.
