Description

Deep, rich, and intensely tomato, this is the ingredient that gives a sauce its backbone.Deep, rich, and intensely tomato, this is the ingredient that gives a sauce its backbone. Rega has been processing tomatoes in Campania, southern Italy since 1965, sourcing from the region around Naples that has always been considered the heartland of Italian tomato production. Double concentrated tomato paste removes roughly half the water from standard tomato puree, leaving behind a thick, dense paste that delivers body, depth, and a deep brick-red color without adding a drop of extra liquid to the pot. A spoonful stirred into a pasta sauce, a braise, a soup, or a stew transforms the whole dish, adding a richness and roundness that no other ingredient can replicate quite as efficiently. Made with just two ingredients: tomato juice and salt. Nothing hidden, nothing unnecessary. For the cook who knows that the best sauces are built on concentration, not compromise.
