Description

Polara Indian Tonic Water, 6.7 fl x 4 comes out of Modica, in the southeastern corner of Sicily, and it reads Italian rather than British: brisk, dry and openly bitter from quinine hydrochloride. Sugar and citric acid keep it balanced, but the bitterness clearly leads, which is exactly what you want behind a juniper-heavy London dry gin. The carbonation is fine and persistent, so a tall glass does not go flat on you halfway down, which is the usual complaint about cheap tonic. Alcohol free, four glass bottles to a pack. Build your gin and tonic in a big glass packed with ice, add a wedge of lemon, and stir once.
