Instead, a Perugia house builds a slow-risen sourdough dough, light and buttery, and runs a limoncello cream through the crumb made with a real infusion of lemon peel, so the finish is bright rather than syrupy. The badge on the front carries the city and the year 1907. Serve it in thick wedges after a heavy holiday dinner, when nobody wants anything rich, with espresso or a small glass of cold limoncello on the side.
