Description

Ore Liete Classic Panettone Holiday Cake is baked in Umbertide, in the Umbrian hills north of Perugia, rather than in Milan where almost every panettone comes from. The dough is raised with sourdough and enriched with egg yolk and butterfat, then studded with sultana raisins and candied orange and citron peel, which gives a tall, airy crumb with a honeyed edge. Classico simply means the traditional version: raisins and candied peel, no chocolate and no cream filling, just the loaf as it has always been made. Tear it apart with your hands the way Italians do. Serve with espresso, a glass of dessert wine, or a bowl of mascarpone whipped with a little sugar.
