Each nest unwinds on its own in boiling water and is ready in four to five minutes, so this is a weeknight dinner that eats like a restaurant one. Tagliatelle is the classic ribbon of Emilia-Romagna, cut wider than fettuccine and built for butter, a slow ragu, or shaved truffle. Made in Italy from durum wheat semolina. Do not drown it in sauce; toss it in the pan with a little pasta water and let the pasta lead.
