Description

Maria Cristina Pappardelle Egg Pasta ribbons are made with a full 30 percent fresh egg in the dough, a ratio well above most dry egg pasta, which is what gives them their golden color and tender chew. Rolled in Italy from durum wheat semolina, the wide ribbons come coiled in nests that unfurl on their own in boiling water in four to five minutes. That broad, porous surface is built for heavy sauces: a long-cooked beef or wild boar ragu, braised game, or mushrooms in cream. Pappardelle comes from the Tuscan verb pappare, to gobble up, which tells you how they are meant to be eaten. Finish them in the pan with the sauce, never on the plate.
