Durum wheat semolina and fresh eggs at thirty percent of the dough give the strands their pale gold color and a slightly rough, porous surface that holds butter, cream and ragu far better than plain semolina ever does. Each coil loosens into long ribbons in the pot and cooks in minutes. Fettuccine translates as little ribbons. Make the classic version with butter and Parmigiano and nothing else, or go further with truffle sauce or a mushroom cream. Save a ladle of the cooking water and finish the pasta in the pan with the sauce.
