Description

Mancini draws its flagship spaghetti, 2.2mm across and 260mm long, on the farm in Monte San Pietrangeli, Le Marche. The farm grows its own durum wheat, mills on site, and uses only semolina and water, bronze-die extruded and slow-dried at low temperature. This strand carries one of the longest drying protocols in the range, 36 hours, which holds a firm, al dente bite and a strong wheat flavor. It suits a broad range of preparations, from aglio e olio to tomato and seafood sauces and carbonara. Cooks in 9 to 11 minutes. Made from single-estate Italian durum wheat semolina and water.
