Description

Mancini makes this foodservice format of its rigatoni, a large straight-cut ridged tube 19.2mm across and 45mm long, batch-coded with the harvest year, on the farm in Monte San Pietrangeli, Le Marche. The farm grows its own durum wheat, mills on site, and uses only semolina and water, bronze-die extruded and slow-dried at low temperature. The ridged exterior and wide interior hold meat ragu, braised meat, and vegetables. It is traditional in Roman cooking for alla pajata, alla griccia, and pasta al forno. Cooks in 9 to 11 minutes. Made from single-estate Italian durum wheat semolina and water. Bulk bag for high-volume kitchens.
