Mancini makes this 3kg foodservice format of its penne rigate, a diagonal-cut ridged tube 10.2mm across and 50mm long, batch-coded with the harvest year, on the farm in Monte San Pietrangeli, Le Marche. The farm grows its own durum wheat, mills on site, and uses only semolina and water, bronze-die extruded and slow-dried at low temperature. The angled ends take sauce inside while the ridges grip it outside, across tomato, cream, and meat sauces and baked dishes. Cooks in 7 to 9 minutes. Made from single-estate Italian durum wheat semolina and water. Bulk bag for high-volume kitchens.
