Luciana Mosconi Casarecci Pasta is the semolina version of casarecce, a short rolled shape with a groove down its length, made from durum wheat and water rather than egg. That groove is not decorative: it is where the sauce ends up. It eats firmer and chewier than the egg version, and it is bronze drawn so the surface stays rough. Cook it a minute short and finish it in the pan with your sauce rather than pouring the sauce on at the table.
