Pasta Mista is a mixed short pasta format produced by Pastificio Liguori, a pasta maker based in Gragnano, near Naples, established in 1820. Carrying Pasta di Gragnano IGP certification, the pasta is made from 100% Italian durum wheat semolina, extruded through bronze dies for a rough, porous surface, and slowly dried at low temperature in a certified process. Pasta mista, known in Naples as pasta ammiscata, has its roots in the traditional practice of combining leftover or broken pasta shapes into a single pot, and is particularly associated with thick Neapolitan soups made with legumes such as chickpeas, lentils, and beans. The mixed-shape format delivers a varied texture in each serving, making it well-suited to minestre, bean soups, and hearty winter preparations.
