La Molisana Spaghetto Quadrato Chitarra #1, 100% Italian Wheat, 16 oz (454 g)

Inspired by the Abruzzese chitarra cutting frame, this square-edged spaghetti brings more surface area—and more sauce-grabbing texture—than a round strand. La Molisana uses semolina with a high gluten index, ensuring that the sharp corners remain intact through cooking and stirring. After bronze extrusion, the pasta is laid flat on wooden trays and air-dried for nearly a full day, allowing moisture to leave the core slowly and evenly. The resulting strand measures roughly two millimeters on each side, giving it a hearty, satisfying chew. Drop into rolling salted water for seven minutes to reach a firm bite; sauce the pasta directly in your pan for another thirty seconds so it absorbs flavors. Classic applications include cacio e pepe, robust tomato ragu, or pancetta-based sauces—the angular edges catch pepper, cheese, and meat bits rather than letting them slide off. A QR code on the back of every pack shows the exact wheat lots and farms used, reflecting the brand’s short supply chain. Leftovers reheat surprisingly well; a quick toss in a skillet with a splash of water restores the original texture. For baked pasta pies—think spaghetti al forno—par-boil five minutes, arrange strands in a springform pan with cheese and sauce, then bake until golden. Store unopened packs in a cool cupboard up to three years, or transfer opened strands to a jar with a tight lid to keep them safe from pantry humidity. When you want spaghetti but crave something distinct, spaghetto quadrato is the game-changer.
