Description

Paccheri are generous tubes roughly an inch across—large enough to stuff yet easy to serve. La Molisana bronze-cuts each piece, creating a rough outer surface so sauces cling to every bite. Eleven minutes in salted boiling water yields a firm tube; shorten to nine if you plan to bake. Popular in Campania, paccheri showcase seafood sauces, braised meat ragu, or ricotta fillings. Stand par-boiled tubes upright in a baking dish, pipe in cheese and herbs, spoon over tomato sauce, then bake until the tops blister and bronze. Because the pieces are wide, lift them gently with a slotted spoon to avoid tearing. Store dry tubes in a sturdy container; their size can crack if crushed under heavy items.
