Fragassi Italian Truffle Spread is earthy, aromatic, and meant to be used sparingly. Spread it thinly on crostini, stir a small spoonful through hot pasta or risotto at the very end of cooking, or put a little under a fried egg. Do not cook it hard, because heat drives off the aroma you paid for. A jar lasts a long time, since a teaspoon does the work of a tablespoon.
