Fiasconaro Panettone with Pineapple, Apricot & Pistachio, 35.3 oz (1 kg)

Fiasconaro Panettone with Pineapple, Apricot & Pistachio is the showiest loaf the Castelbuono bakery makes. Candied pineapple and apricot run through a slow-leavened dough, the top is finished with a crisp glaze and whole pistachios, and the whole thing is wrapped by hand. It comes from the Madonie mountains above Palermo, in Sicily, and the 1953 Collection is named for the year the family opened. The tropical fruit is unexpected in a panettone and that is exactly the point. Pull it apart rather than slicing it, and serve with a sweet Sicilian dessert wine. It is the kind of gift people remember receiving.
