Description

Fiasconaro Classic Panettone with Malvasia Wine is baked in Castelbuono, a hill town in Sicily's Madonie mountains, by a family of pastry makers who threw out the usual Milanese formula in favor of island ingredients: Sicilian wheat flour, Sicilian candied orange peel, select raisins, and sweet Malvasia delle Lipari passito D.O.C. carrying the perfume. Passito means the grapes were dried before pressing, which concentrates them and explains the honeyed note running through the crumb. The texture pulls apart in long buttery strands and the orange stays bright rather than muddy. Serve it torn into wedges with espresso, and pour a glass of the same Malvasia alongside if you can find one.
