Emil Reimann Lebkuchen Gingerbread with Cherry Filling comes out of a Dresden bakery in Saxony, where spiced cakes have belonged to the Christmas table for centuries. Each soft square of rye and wheat hides a tart cherry layer under a dark cocoa glaze, with orange peel paste and chopped almonds adding depth underneath. The sourness of the cherry against the sweet spice is what makes it work. Lebkuchen is the German name for this style of soft spiced gingerbread. It is non-GMO, made with no high fructose corn syrup and no artificial colors, and the dark color comes from cocoa rather than dye. Serve with coffee, black tea, or a glass of mulled wine.
