Description

La Casa Del Grano Ditali Rigati Small Pasta Tubes are thimbles, which is what ditali means, and they are the cut Italians use for pasta e fagioli and pasta e ceci. Short and hollow and ridged, so they fill with broth. Cook them in the soup itself rather than separately and let the starch thicken it. The pasta comes out of Cagliari, from a house known for the island's traditional cuts since the 1950s. Beans, a little rosemary, good olive oil poured over at the table. This is the cheapest good dinner in all of Italian cooking.
