Members of the Di Martino family have owned & run the factory since 1912, so a passion for pasta has always been interwoven with their family history. Their ability to mix the traditional technology along with the selection of raw materials is the secret to the high quality of their pasta. A cut decidedly wider than the others. The term (meaning "slap" in Neapolitan) perhaps refers to the noise it makes when dressed with a sauce, a sort of squishy slap. Anyone who thinks they’re not missing anything by not trying them really is "nu' turzo" (an idiot).
