Coppenrath Spekulatius Spiced Cookies with Chocolate take the crisp cinnamon-and-spice biscuit Germans bake all winter and coat it in dark chocolate of 60 percent cocoa, covering more than a quarter of each piece. That is a proper coating, not a thin drizzle, and the bitterness of the chocolate balances the sweet spice beautifully. The bakery is in Geeste, Lower Saxony, and its red seal carries the year 1825. The old molds still press windmills, cottages and deer into every biscuit. Spekulatius is what Germans call speculoos, the same spice biscuit you know from Belgium. The carton recloses, so they stay crisp. Dunk one in a dark roast coffee and you will understand the appeal.
