Coppenrath Spekulatius Spiced Christmas Cookies come from a bakery in Geeste, in northwestern Germany, and they are built on caramel and warm baking spice rather than heavy sweetness. Spekulatius is the German name for the thin biscuit sold elsewhere as speculoos, pressed in carved molds that leave windmills, ships and deer across each piece. They snap rather than crumble, and the dry, toasty spice stands up beautifully to strong coffee. They are also halal certified, so they can go on a table that many Christmas biscuits cannot. The flat pieces stack and travel without breaking, which makes them a good choice for a lunchbox, a road trip, or a tin you are posting to someone.
