Coppenrath Spekulatius Butter Cookies are thin, crisp German shortcrust biscuits pressed in molds that leave windmills, houses and deer stamped across their faces. They are baked in Geeste in Lower Saxony by a house whose red seal dates to 1825, and they lean on concentrated butter and ground Bourbon vanilla rather than the heavy clove and cinnamon of darker spekulatius. If the traditional spiced versions have always seemed too strong to you, start here: these taste of butter and vanilla first, with just a whisper of spice. Children love them. Have them with coffee, tea, or a mug of good drinking chocolate, and they are lovely crushed into a cheesecake base.
