Colavita Calabrian Hot Chili Pepper Spread is a product of Italy built on peperoncino, the small fiery chilli that runs through all the cooking of Calabria, in the toe of the country. Because it is a spread rather than whole chillies in oil, there is nothing to chop: spoon it onto bruschetta, stir it into a pasta sauce or a salsa, or use it anywhere a dish needs a kick. Calabrian chilli has a fruity warmth behind the heat rather than a flat burn. Start with less than you think, taste, then add more. Refrigerate after opening. It is also very good spread thinly in a sandwich with salami and provolone.
