Dolciaria Monardo Cantuccini Cacao & Almonds are produced by Dolciaria Monardo, a family-run confectionery based in Soriano nel Cimino, in the Lazio region of central Italy, with roots in the artisan biscuit tradition going back over three generations. Cantuccini — also known as biscotti di Prato in their Tuscan origin — are a distinctly Italian biscuit format defined by their twice-baked process: the dough is first baked as a log, then sliced and returned to the oven to dry out completely, producing a very hard, dry, snap-resistant biscuit designed for dunking. Monardo's cocoa variant introduces unsweetened cocoa powder into the base dough of wheat flour, eggs, butter, and honey, giving the biscuits a mild chocolate note that complements the roasted, slightly bitter character of the whole almonds embedded throughout. The resulting biscuit has a firm, crunchy texture with visible almond pieces and a deep brown cross-section. Traditionally paired with Vin Santo, the Tuscan dessert wine, but equally well-suited to espresso or coffee, cantuccini occupy a well-defined space in Italian food culture as a post-meal or afternoon nibble.
