Olio Barbera has been pressing olive oil in Sicily since 1894, making it one of the island's oldest and most respected producers, and this single-cultivar Calatina oil is among the finest expressions of what Sicilian olive oil can be. Grown using certified organic methods and harvested by hand between October and December, the native Calatina olives are milled within 48 hours of harvest through a cold extraction system, then left to settle and decant naturally before filtration, preserving every last drop of aromatic intensity and polyphenolic richness that makes a great Sicilian oil so distinctive. The result is bold and beautiful: deep green with golden hues, intensely herbaceous, with notes of artichoke and green tomato, a pleasant bitterness, and a well-balanced peppery finish that tells you the polyphenols are all there.
