Wu Mu Ramen noodles with pickled mustard Yunlin Zha-Cai is a Taiwanese ramen noodle with pickled mustard flavor. Zha-Cai is also known as Sichuan preserved vegetable, Chinese pickled vegetables, or pickled mustard. Mustard cabbage is pickled using salt, then dried, and rubbed with hot chili paste before fermenting, similar to the process of making kimchi. This spicy pickled mustard is the perfect addition to ramen noodles. And when it comes to ramen noodles, Wu-Mu makes noodles differently. Unlike their ramen noodle competitors, Wu-Mu ramen are steamed, instead of fried. By using steaming technique, instead of deep frying, their products lower in fat compared to other manufacturers. Once steamed the noodles are then dried for 9 hours, but it's worth the wait for the texture and taste of their delicious Taiwanese ramen noodles.
To prepare, add ramen noodles to boiling water, cooking for 3 minutes. Add seasoning powder and oil, stirring well. Enjoy! We love slurping up this ramen topped with pickled vegetables and a boiled egg.
