It’s made by blending the boar meat with garlic, sea salt, and black peppercorn. Hand-tied and dry-cured for 30 days, it has a complex and rich, but fresh and slightly sweet flavor, that’s not heavy or gamey.
Salami can be traced back to the Roman Empire, where it was known as "salsum," or salted aliment. The meat was salted, or "cured," to extend its shelf life and ensure a steady supply all year. While Italian culture now boasts over 300 different types of salami, what truly distinguishes them is their region of origin and method of preparation. For example, the famous "Genoa Salami" originated in the Italian town of Genoa and is a classic fusion of fermented pork flavored with garlic, salt, and peppercorns. The story of Fabrique Délices starts, on paper, in 1985, but the story of its products began much earlier. In 1920, SAPAR, a brand specializing in gourmet pate, mousses, terrines, and rillettes, was established in Meaux, France. Soon the fine quality of its products attracted the attention of the finest gourmet stores and prolific chefs in Europe. By 1985, Jean Claude Augé, the owner of Sapar France, felt that it was time to enter the American market, which suffered from a distinct lack of gourmet-quality forcemeat products, and established Fabrique Délices as the United States subsidiary to bring SAPAR products to the US market. Fabrique Délices Wild Boar Salami may sound unique, but its flavor is rich and versatile, making it an excellent addition to charcuterie boards, picnic baskets, etc. It pairs well with most other cured meats and cheese, making the salami an excellent addition to most sandwiches, paninis, stews, and even a bold pizza topping or salad garnish.
