Volpi's traditional bresaola beef prosciutto (no nitrates or nitrites added) has a sweet, aromatic flavor. Unlike pork prosciutto, bresaola contains less fat content, making each slice more dense and tender. 

Bresaola was born in Valtellina, in the Italian region of Lombardy. Holding significant cultural importance, Italian farmers used to salt, or "cure," the pork to extend its shelf life and ensure a steady supply all year. Italian culture has mastered the art of slow-curing the meat and now boasts hundreds of variations of the classic fusion of meat, salt, and generations of cultural knowledge. In the case of Bresaola, It all begins with an intact, lean piece of a cow's flesh. As the curing process begins, the meat is laced with a blend of salt and warm spices. After a 12-week-long curing process, bresaola should be dark red with thin white lines. The perfect slice of bresaola will be a fusion of subtle sweetness and a distinct taste of beef.
