After defeating the British at Port chef had to make a sauce to celebrate victory, but having no cream, he had to mix olive oil with eggs, and hence a new sauce was born. In honor of the victory, it was called "Mahonnaise." The word mayonnaise appeared in British and German cookbooks and eventually migrated to the USA.
