Production of Jamon was deeply intertwined with Spanish farmers' agricultural calendar. Spanish farmers fattened their Iberico pigs (original Spanish pigs) during warm months and slaughtered them in the fall. Iberico pigs are characterized by high-fat content, meaning that each slice is covered with a layer of fat. This occurrence makes the curing process longer, giving the Jamon a more complex, robust flavor. These happy pigs run around eating acorns as their last day approaches, which is how fat is slowly incorporated into their organism and eventually contributes to Jamon's famous melt-in-the-mouth texture.
