Sherry is a fortified wine, which means that a small amount of neutral grape spirit is added to increase its alcohol content. Sherry vinegar is traditionally aged using the Solera method, and in the US it’s required by law that it should be aged in oak for at least 6 months, before claiming the renowned title!
