Blini is a type of thin pancakes, somewhat resembling French crepes. It is one of the oldest dishes in Russia, and part of almost daily cuisine. Blinis are eaten in both sweet or savory versions.  Blini with varenye (fruit preserve) or blini with caviar are two of the more popular versions.  Blinis were symbolically considered by early Slavic people in pre-Christian times as a symbol of the sun – round, golden and warm. In modern days, blinis are also a major holiday dish, similar to Turkey on Thanksgiving, during Maslenitsa, the oldest surviving Slavic holiday also known as “crepe week.”  Maslenitsa is a sun festival, which celebrates the end of winter.  

Instruction

1.  Pour half bottle of the blini pancake mix in a bowl, and steadily add half liter of room temperature water.  Add 3 1/3 tablespoons of olive oil or other plant-based oil.  Thoroughly mix the dough in the bowl and make sure that there are no remaining lumps.  

2. Let the mix sit for 5 minutes.  

3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour the mix onto the griddle. Brown on both sides and serve hot.

4. Optional: Fill the pancakes with Russian fruit preserve varenye or top them with caviar and sour cream!
