Production of chorizo was deeply intertwined with Spanish farmers' agricultural calendar. Spanish farmers fattened their pigs during warm months and then slaughtered them all together in mid-November. Then, the newly acquired meat was cured, fermented, and stored all at once, ensuring a consistent supply of meat all year round.
