Prepared according to a traditional Italian family recipe handed down for four generations, this slow-cured and string-tied salami is made with vegetarian-fed heritage-breed (an original breed of pig that was the majority found on pig farms before the industrial agriculture boom. Heritage pigs haven't been crossbred, so they're fatter and their meat is juicier) pork raised without antibiotics.
