Olli Napoli Applewood Smoked Salami is an artisanal applewood smoked salami bursting with complex and hearty flavors. Prepared according to a traditional Italian family recipe handed down for four generations, this slow-cured and string-tied salami is made with vegetarian-fed heritage-breed (an original breed of pig that was the majority found on pig farms before the industrial agriculture boom. Heritage pigs haven't been crossbred, so they're fatter and their meat is juicier) pork raised without antibiotics. 

Believed to have been made for at least 2000 years because curing meat was one of the prime means of food preservation, salami (cured sausage containing fermented and air-dried meat, predominantly pork) derives from the singular Italian word salume, attributing to all types of salted meat. Considering that salami can be stored at room temperature for almost forty days once cut, it was historically popular among Central, Eastern, and Southern European peasants.
